When to go to Cappadocia?
Wind and water carved the tuff around Göreme into cones, spires and cave dwellings, some of them still lived in. Balloons go up over Cappadocia at first light and the valleys turn gold beneath them. Below ground Derinkuyu descends level after level into carved streets and store rooms, while the Ihlara valley cuts a green line through the rock, with gözleme and tea waiting at the end.
